Gluten-free chili is one of my favorite crock pot recipes. With a little preparation, it spends the day simmering in the slow cooker so you can enjoy your day doing other things. By evening, its tantalizing smells will welcome you as you sit down to a simple yet delicious meal.
After my husband and I married, he informed me that he did not like chili powder. Eek! He asked me not to use it in recipes. I don’t think then he realized what a challenge he gave me. Do you know how many recipes call for chili powder? Quite a few!
As a kid, seasoning packets were a pantry staple in our house. If spaghetti was on the menu, you mixed the season packet with tomato paste and water and there was your homemade sauce. Chili was the same. Well, guess what seasoning packets have in them? Yep. Chili powder! (They also can have other ingredients such as MSG (that I am allergic to!). At the time, I could not imagine making chili without using the seasoning packet.
After I spent time mulling over different options (fresh chili peppers, cayenne pepper flakes and ground cayenne pepper) I tried ground cayenne pepper. My husband loved it! I love it because it is easier to adjust “the heat” in this mouth-watering dinner.
You know what the best thing about this experience was? My chili went from okay to fabulous! Since I was not using the seasoning packet, I started using fresh vegetables and dried herbs in my homemade chili. I was able to fine tune the recipe to what I feel is the best homemade gluten-free chili ever!
I make it often for company. Served with gluten-free cornbread and a delicious gluten-free dessert, this delicious chili is one super easy dinner. It gives me time to enjoy our guests and not be stuck in the kitchen. Whether I’m cooking for just the two of us or for a crowd, I always make extra! Best Gluten-Free Chili
Made with all natural ingredients, gluten-free chili is delicious. Let it simmer on the stove or in the slow cooker all day!
- Yield: 6 to 8 servings 1x
- 2 pounds ground beef or turkey
- 1 large onion, chopped (1 ½ cups)
- 2 cloves garlic, crushed
- 2 teaspoons sea salt
- 2 teaspoons cumin, ground
- 2 teaspoons oregano, dried
- 2 teaspoons cocoa, unsweetened or dark chocolate
- 1/8 to ¼ teaspoon cayenne pepper, ground, (the red kind)
- 2 cans (15 ½ ounces) red kidney beans, undrained
- 1 large can (29 ounce) tomato sauce
- In a large skillet, cook and stir ground beef, onion and garlic until beef is brown. Drain the beef mixture and transfer to large stock pot or slow cooker. Stir in remaining ingredients.
- Cook on low heat 6 to 8 hours.
Garnish with chives and freshly grated cheddar cheese.
