Don’t you just love easy recipes? Gluten-Free No Bake Cookies are super quick to make. I always keep the pantry stocked with the ingredients for this recipe so I can make it at a moment’s notice. If I am in need of a quick dessert or homemade gift, this is my go to recipe!
This delicious recipe belonged to my mom, Jo. Although I never knew her, I have inherited her love of baking. My aunt tells me that my mom would create scrumptious desserts. I am so grateful my sweet aunt kept my mom’s cookie recipe and passed it on to me. At the top of the recipe card, my aunt wrote: “So delicious, your mom would make these often for your brothers.”
There are quite a few no bake cookie recipes that call for peanut butter. Since I have a peanut allergy, I was thrilled that my mom’s recipe did not use it. Her original recipe called for margarine, canned milk, a lot of sugar and nut meats. To be honest, I had the recipe for about 10 years before I finally asked my aunt what nut meats were. I felt kinda silly when I found out the they were the inside of the nut. 😉
We don’t eat margarine and I don’t normally cook with canned milk, so I revamped the recipe into a more user-friendly and healthier version for our house. I replaced the margarine with a healthy fat, butter. Instead of canned milk, I use organic whole milk. Nut milks are also delicious in this recipe. The original recipe called for 2 cups of sugar which I thought was a bit much. So, I reduced it by 1/2 cup and I could not be happier with the results!Print
Dark chocolate and oatmeal are paired with cashews in this super easy recipe.
- 1 1/2 cups cane sugar
- 1/2 cup unsalted butter
- 1/2 cup whole milk or unsweetened nut milk
- 1 tsp. vanilla extract
- 3 cups organic gluten-free old-fashioned oats
- 1 c. shredded coconut
- 6 T. cocoa (dark chocolate is my favorite)
- 1/2 c. cashew nut meats
- Mix sugar, butter and milk into a medium saucepan, stirring constantly bring to a boil for 1 minute. Remove from stove and add vanilla.
- In a separate bowl, combine the dry ingredients. Pour hot mixture over dry ingredients and stir until thoroughly combined. Drop by teaspoonfuls on parchment paper. Allow to dry.
