Don’t you just love a slice of pie that is piled high with melt-in-your-mouth homemade meringue topping? Who am I kidding? Forget the pie! I love eating meringue right of the bowl!!! Let’s not forget the beaters!
I love everything about meringue: it’s rich warm vanilla flavor, melt-in-your-mouth heavenly goodness and of course, that it is naturally gluten-free!!! Not only is it delicious paired with cream pies but can you imagine it covering a homemade gluten-free layered cake? Talk about a mouth-dropping grand finale dessert!!! Banana pudding never tasted so good! Is your mouth watering? Mine certainly is!!!
Unlike whipped cream, this meringue recipe calls for four simple ingredients that are probably staples in your pantry and refrigerator. I usually have whipping cream on hand, especially since I use it in my morning cup of hot tea. However, I don’t always have enough to make homemade whipped cream. (Don’t get me started on whipped cream but you won’t believe how delicious and easy it is to make!).
Some meringue recipes call for using meringue powder instead of egg whites. Which is all fine and good. However, I prefer to use egg whites. I always have eggs on hand and it is just as easy to use them. I like not having to worry about having meringue powder in the pantry. Don’t you just love when life is easy? As my stitching teacher always tells me, “it is easy to be easy.”

You will love this light and airy, melt-in-your-mouth topping! Pile it high on homemade pies, cakes and even puddings! Plus, it is naturally gluten-free!
